calendar catergory properties

I'm using Outlook 2007

Is there a way to create specific properties for categories, beyond the
color of the category?

For example, I am adding a series of randomly scheduled events. All on
different days and lasting for differing amounts of time.

For 10 of these events I would like to have a set of reminders at 1 week, 2
weeks and 3 weeks prior to each event.

For another 10 of these events I would like to set up reminders at 2 days, 5
days and 8 days prior to each event.

If I could call the first group Category Red let's say, and the 2nd group
Category Blue AND could set up a set of rules so that every time I label an
event Red, those reminders are automatically implimented, and same for Blue,
etc I would not need to enter in the reminders for every single event.

Any ideas?

No, that is beyond the scope of categories or any other feature in outlook.
you'd need to create the events and reminders separately.
