boot screen

I noticed that when I changed from SP1 to SP2, the boot screen changed
from "XP embedded" to just "XP". I know that I cannot change the boot
screen as per the EULA, but I am wondering if I can replace the SP2 boot
screen with the SP1 boot screen so that it still would say "XP embedded"?

Actually, the licensing terms changed to allow you to replace the boot
screen with your own.

As far as the "XP" -vs- "XP Embedded" screen difference, it's my
understanding (and I may be wrong) that it was done to make localization
easier. "XP" is a language independant name for the OS line. The word
"Embedded" would probably need to be localized per language.

Correct - I didn't mean to imply that you can edit Microsoft's boot screen.
You can have it use yours instead of theirs.
