How do I remove a boot selection when the boot selection doesn't show
up in the boot.ini?

How is the computer starting up if not using the Windows
2000 boot manager? Using a third-party boot manager?
 
Tell us what you're seeing and post the contents of boot.ini

My 3 choices are:

Microsoft Windows 2000 Professional
Microsoft Windows 2000 Recovery console
Windows 2000 (default)

My boot.ini file isas follows:

[Boot Loader]
Timeout=30
[Operating Systems]
multi(0)disk(0)rdisk(0)partition(1)\WINNT="Microsoft Windows 2000
Professional" /fastdetect
C:\CMDCONS\BOOTSECT.DAT="Microsoft Windows 2000 Recovery Console"
/cmdcons

Items 1 and 3 are the same. I want to delete item 3.

You're missing the 'default=' line. Give this one a go.

[Boot Loader]
Timeout=30
default=multi(0)disk(0)rdisk(0)partition(1)\WINNT
[Operating Systems]
multi(0)disk(0)rdisk(0)partition(1)\WINNT="Microsoft Windows 2000
Professional" /fastdetect
C:\CMDCONS\BOOTSECT.DAT="Microsoft Windows 2000 Recovery Console" /cmdcons
