I would like to block all incoming emails for an extended
period of time. I have someone out on maternity leave.

Are you on an Exchange server? Configure the send and receive limits on the
mailbox of the user to 0

Sounds like you also need to configure auto-reply for that account
telling the sender's what other e-mail address to use at your company to
cover her responsibilities while she is away. But then I have to wonder
why you don't simply route all her e-mails to whomever assumes her
responsibilities in her absence. Do you really want to irritate your
customers?

An auto-reply won't work if send/receive is set to 0.

But I agree on the irritation level. Here we put the user to a choice;
either delegate or disable.
