Beyond selecting the 'UNDO' button how can SmartART be reversed?

I know you can use the 'UNDO' button up to a certain amount of times to undo
various commands as you work but with converting to "SMARTART", Is there a
way to simply 'revert' back by clicking a button to reverse activating that
command?

One technique is to make a copy of it (and drag it off the slide, out of the
way) before effecting changes to your Smart Art. This way, no matter how
fubar the SmartArt becomes, you have a pristine copy you can revert to.
Unfortunately, this requires pro-active planning instead of re-active
action.
