Bcc Field

In the past I was able to view if Bcc was used. Is this
option available in newer version of Outlook?
 
You were never able to see this as that is the whole purpose of a BCC. Of
cource you are able to see the BCC field in the messages you've sent
yourself in the Sent Items folder.

I think the question was about viewing the Bcc field when composing a
new e-mail. In Outlook 2003 this can be done through View -> Bcc field
in the new e-mail window.
