Does anyone know if there is a way using task scheduler
to have Windows Explored automatically set up to copy
certain files from the hard drive to a CD rom at
scheduled time

I do not think so. While you could set up a Scheduled Task for to copy
the files, this will cop them into a cache only when you use the
internal CD burning tool.
If you are using third-party software you may want to check the online
documentation and manual for if you can set this up
