Back up to zip disk

I am trying to backup "My Documents" to six 250MB zip disks. As I try to run the backup it tells me that the disk does not have enough space. The only thing on the disk is the data from when I did a backup last month for the first time
How do I get the system to overwrite these disks with any new inforamtion
 
What software are you using to record to Zip disks?
