Did you perhaps forget to mention that you might have also merged cells ?
What you describe is exactly what happens when cells are merged.
You see the word wrap while entry is taking place, and after <Enter>, you
revert back to the single row height.
*Automatic* word wrap and merged cells don't go together.
You can of course manually expand the row height to attain the desired
appearance.
You could try "Center Across Selection" in conjunction with word wrap to
obtain your desired *automatic* wrapping, and the appearance is almost
exactly identical.
<Format> <Cells> <Alignment> tab,
In the "Horizontal Window", scroll to the bottom and choose "Center Across
Selection", then check the "Word Wrap" box, and then make sure the "Merge
Cells" box is *unchecked*, then <OK>.

The wrap text is checked, and the text wraps while the
cell is selected. Soon as you click on another cell the
original cell shrinks back to a single line text. Also
tried "row - height - autofit" and that did not help.
