Automatic Messaging

We have a general mailbox and are using an Exchange Server. We'd like to
automatically respond that the email has been received and will be directed
to the appropriate person to handle. The Out of Office assistant would seem
the obvious choice, but we don't want the message subject to start out "out
of office"

How can the subject line be changed?
 
No, the OOF wouldn't be an obvious choice as it is not designed for this and
you cannot modify the subject.

Create a server-side rule for that mailbox with the template you want to
reply with.
For this you need to create a mail profile with that mailbox as the primary
mailbox.
