automatic contact list when addressing an email

I use Microsoft Office 2003, after typing the first letter of a contact when
sending an email only contacts used that day come up, how do i set it so all
contacts with that first letter come up????
 
It is the autocompletion cache which remembers the past 1000 names you have
sent to.
It has nothing to do with what's in your Contacts folder.

Send an email to all your contacts (if you have less than 1000) and it will
store them all in the autocompletion cache.

You are confusing two different features of Outlook. You are using
autocompletion, which has nothing to do with your Contacts. It only uses a
cache of your last 1000 recipients (in Outlook 2003) or 2000 recipients in
current versions.
If you want to use your Contact list, you should be using autoresolution,
not autocompletion. After you type the letters in the To: field, hit Ctrl-K
to resolve against your Contacts and bypass your autocompletion cache.
 
A user of mine is a delegate & can "send on behalf of" & when they have to
send email they have to go into that person's contacts list & send to. After
they send it however it does not want to save in the autocomplete cache. Is
it possible it's reaching max recipients?
 
No. It the max has been exceeded, entries are removed on a FIFO basis.
It's far more likely that autocompletion has just stopped working. Happens
all the time. Autocompletion is not a robust or reliable feature. It
frequently stops working usually because Outlook loses its connection to its
autocompletion cache. This can happen for a number of reasons, most often
because Outlook is not exiting completely and thus not writing to the cache.
Make sure you run no add-ins or sync software that might hold Outlook open
after you exit. After you find and resolve the problem that is preventing
Outlook from exiting properly, you may need to create a new Outlook profile
to get autocompletion to work again. If you're lucky you'll be able to
migrate your old cache to the new profile following directions here:
