Auditing

I need to check what documents are being accessed by a
user and when, I've played with auditing but can't see any
useful information.

I might be looking at the wrong utility or just setting it
up wrong, can someone give me some tips on where to start
please?

For file access success auditing, you want to be careful and only enable
that on the specific folders and files you wish to audit. Otherwise, your
windows security event log will fill up very quickly.
