I am building a PC, I have it all up and running but I have found
cable from the power supply which Black and White with a small plug
like the one on the CPU fan, I would like to know what it does and do
I need to use it.

Does anybody know of any websites with details on the ATX power connectors?
There is a few on my power supply that I wonder about, one of them in
particular is a connector much like the old motherboard power
connectors-only I have just 1 connector instead of the old supplies having
2. I just curl it up with a cable tie and ignore it.

It's probably a PSU fan monitoring connector. You may be able to connect
it to your motherboard and monitor the PSU fan RPMs.
