When I attach a pdf file, or an excel spread sheet to mey
email and send it to a hotmail attach, the files are
converted to a winmail.dat file. I had just installed the
latest security patches from Microsoft. I am running
Microsoft 2000 Professional.

If you are sending your messages in Outlooks RTF(Rich Text
Format)to a non-Outlook recipient, he or she will get
plain text plus attachments with .dat extension. Change
sending format to HTML and you should be ok.

I'm having the same problem with Outlook 2000. I did not update my
Outlook with any of the updates so not to have the security
restrictions Microsoft has forced on users. I've done a little looking
into it and found the following:

When I send the (in my case a faxb.exe) attachment via Outlook to users
that do not use Outlook, they receive the winmail.dat file rather than
the faxb.exe file. I had sent a copy of the same e mail to a second
account that I have and looked at it on my pop web mail account. It
was in the winmail.dat format. The I then started outlook and the same
message was downloaded into Outlook and showed up as the faxb.exe
file.

I was able to get my attachment to my clients via sending by web mail
rather than through outlook, but this is cumbersome and I would like to
get Outlook working again.

Anybody have any ideas?

To change the format of your email:
Open TOOLS | OPTIONS... | MAIL FORMAT

Try using Plain Text format to send your attachment.
