Why do arrows appear in the lower lefthand corner of my
Icons when I try to Create a Shortcut?

Also, when I try to customize an Icon for a Dhortcut it
shows me the picture I want for the Icon but when I click
on Apply, the actual Icon is created with an arrow in the
lower lefthand corner of the Icon I selected. Why and
how can I get rid of the Arrow?

The arrow indictates that the icon is a shortcut to a program rather
then the program itself. You can remove the arrow using TweakUI
