Are reminders a server or a client-side function?

I am using a Microsoft Exchange server with Outlook 2003 and I would like to
set up appointments but not necessarily have them showing up on all the
computers that access the Exchange server. How can this be done?

IN addition to the below, I'd still like to be able to see the appointment
info on all computers, but I'd rather have the reminder pop up only on ONE
specific computer, that I could choose..

If your mailbox is on the Exchange server, then the reminders are stored in
Exchange. I believe, then, that when reminders appear, they'll appear on
any client.

Every computer that access that mailbox as its primary information store will see all reminders for that mailbox's Calendar folder.

Okay, but, is there a way to disable a reminder from appearing on every
computer except the one you choose?

As Brian indicated there's no way to do that. Copy the item to a PST file or
another mailbox and have only that user open the PST or mailbox. That's
about it.
