Configure any Name and E-mail address you want in the fields when
defining an e-mail account. Be aware that your ISP may still insert
your IP address in your outbound e-mails so you really cannot lie about
who you are: the datestamp and IP address can be used to determine who
you are. You can also be traced by the Received headers that your ISP's
mail server adds over which you have no control and which can be traced
back to you or your upstream provider.
 
The short answer is, no. Anyone who knows how to look at email headers will
know where your message came from.
