I need to figure out how to get the ease in and ease out animation effects.
I have office 2003. Can someone help me?

Ease In

Select the text or shape you want to animate, right-click and choose Custom
Animation.

Add Effect|Entrance|More Effects

In the Moderate section, click Ease In.

Click OK to close the dialog box.

Ease Out

Select the text or shape you want to animate, right-click and choose Custom
Animation.

Add Effect|Exit|More Effects

In the Moderate section, click Ease Out.

Click OK to close the dialog box.

One addition to Echo's steps:
If you don't get a task pane when you go to Custom Animation, you may have
turned off the new animations. To turn them back on, go to Tools--> Options,
Edit tab and uncheck the bottom three boxes. These boxes disable the
features new to 2003. The one you are especially interested in is New
Animaiton Effects.

I still did not find what I needed. I tried the steps given to me and the
effects are still not there.

Did you get to see the sections for Basic, Subtle, Moderate and Exciting? You
should be able to see it after you have click on "More Effects". Also, have
you followed Kathy's suggestion by checking whether the new feature/s have
been disabled?

It's also good to see a screenshot.
You could do a print screen, paste it on Microsoft Paint and save the image.
Then, upload it onto http://www.imageshack.ws
