Is there a way of setting up a Powerpoint presentation
that will allow a viewer to play the presentation but
prevent that same viewer from accessing/editing the slide
content (i.e. allowing viewing only)?

Janine,

The method you are suggesting does default to the presentation mode, but
does not prevent editing. To bypass the auto-present mode, all that needs
to be done is to open PowerPoint, select File | Open and browse to the PPS
file. This will open the presentation in edit view.

Taj's link suggests more secure options.
