I have never checked off the box "allow service to
interact with desktop" and am wondering what it's
usefulness is. When would you need to check this off?
What purpose does it serve?

"...interact with desktop" is necessary if the service in question needs to
directly interact with the desktop or the user, IE, to display messages or
prompts. Basically, if a service requires a UI of some sort, chances are
it's going to need to have this setting enabled.
