When I am sending an email and click the To button, all my contacts are in
the list to select from. I know that it should contain all items with email
or fax data, but I'm getting all contacts. Im running Outlook 2000 on
Windows XP Pro. What am I missing?

OK, I chaged my setup so that it is not "Internet Email Only", and I am only
seeing the items that have email or fax numbers. I still get the "Business
Fax" entry even when there is the word "Fax" at the start of the fax number.
It appears that when I select it, there is noting showing in the fax number.

Also, I am having a problem with the order of display of name.

I entered my name as Alan Maul, and told outlook to file as Maul, Alan. It
still shows as Alan Maul (email) in the address book. I modified my entry so
that the name is Maul, Alan, but it still shows as Alan Maul. It's as if
what was originall entered is there for ever. Is there any way to cause that
to update based on the "File as" parameters?

That's what it does.

Describe how you changed your setup and how you then configured your address
book.
