I have a system that I have not used in a year or so, running 2000
professional.
It was a point of sale system with the OS installed by the vendor who is now
out of business.
When I start up, I am prompted for the Administrator password. I have no
clue what that was, and no way to find out. I need to reset it to a new
password so I can use this machine again.

How?

there is a software on the internet which allows you to create a bootable
floppy containing linux bootable file. Boot the machine through the floppy
and through the steps given you can reset the windows 200 admin password.
Chekc on the google site for " how to crack windows 2000 admin password"
