Addy magically turns into a name I know

Hello, experts,

I use Outlook 2000 SP-3 (9.0.0.6627) on a Windows XP Pro machine.

Sometimes when I type or copy a regular e-mail addy into the TO: box and tab
to the next field, Outlook waits a second or two and then replaces that addy
with some other related and handier name. It's always a name I recognize,
but I don't know how to control it. For example, it will magically turn
"(e-mail address removed)" into "Bill Smith."

1) Is there a term for this name, such as Nickname or Display Name or Pet
Name?

2) What is Outlook doing when it does that?

3) Do I have any control over how a recipient's name appears in my TO:
field? If so, how do I exert it?

I'd like to be able to turn any Contact's e-mail address into that new, more
recognizeable name, and here's why:

It lets me know whether I've typed it right. If it doesn't magically
change, I know to check the spelling.
