Everytime I read an email the address of who it is from is going into my address book. How do I prevent this from happening?

Which version of Outlook? See help, about. There is a setting to add address
of people you reply to the address book in some versions. If you don;t have
that version or it's happening to messages you read, then it's an addin
doing it.
