Adding custom symbol

In my Start>All Programs list, about 10 of the programs at the end have
their own "symbol" (not sure of the real name). The others just have a
generic one. Is there a way to change the others to a more recognizable one?
 
Are you talking about the picture icon to the left of the application
name for those programs that reside in the root of the Start Menu |
Programs menu, in comparison to the folder icon to the right of the
names of the additional fly-out menus?

Right click on the program name and select properties. Click on the 'Change
Icon' button'. Now you have to FIND a suitable icon to choose. You will
need a collection of .ico files to choose from. Only a very few ship with
Windows XP. You can download additional free icons from the Internet. If
you do, be aware that you may have to register with an email address - so
take precautions against spam. And as always, make sure you have up-to-date
virus definitions for your always active antivirus software.

Great, now I'm on the right track. I noticed though that the icons I have
presently showing on the 10 that have their own, as all unique to the
particular program, and are the ones you would generally associate with that
particular program. They just showed up there, and I notice they are in
alphabetical order on their own, in other words, two sets of alphabetical
order!

You say you see 'generic' icon. You need to describe how this 'generic'
icon looks. After all, we can't see your screen.
Just guessing, but

one type looks like a manila folder with tiny icons on the side (That icon
indicates a folder of programs that show when opened)
AND
another type looks like an empty window. (That icon indicates a program that
has been uninstalled, but not cleanly.)

As I looked a bit further, as per your question, I realize that they all are
of the type that looks like a manila folder with tiny icons on the side. And
indeed, they are all the ones that have sub folders, or files, inside- and
these all have icons that are programs, specific to the task! So, there is
my answer. I can change the main icon, but because it represents a
collection of programs, it will have to be more general.
