I want to invite people to a meeting so I have created a new meeting request.
I would like to inform their relevant managers so that they are aware their
staff will be away from their desks but not invite them to the meeting. I
think the cc field would be ideal for this but can't find how to add it to
the meeting request.

There isn't a cc/Just FYI field for meetings.

If you want to alert the managers and let the invitees know that their
managers know, then add them as optional in the meeting invite and in the
text of the invite, address people individually so they know why they are
getting the invite (which is always a good idea anyways).

If you only want to alert the managers, just drop them an email and let them
know.

Personally, I'd go for the first solution or I'd make sure that managers
require their reportee's to share their calendars with them and just expect
the managers to do their job and know when their employees are going to be
oof. =)

Their managers can look at the people's availability any time they want
using Group Schedules. Maybe they need to be shown how to use this
function.

Drop them a courtesy email if needed (don't they have enough emails
already?).

I hope this helps you at least a little bit!
