Add fields to ALL contacts

I want to know how to add a field to all contacts. I know how to add a field
to each individual contact.

For example I want to be able to list their kid's names and birthdays (some
have 3 or 4). How can I make it so my template for all contacts is the same
with customized fields?

If this is not possible, do you have a suggestion for entering all that
information on those that need it?
