Does Outlook go into .pst folders to find activities relating to a contact?
If not, is there a way to set it to? Also, does Outlook go by email address
(when an email comes in) to match with contacts? Or do I have to go and list
the contact in the options of each message (which would obviously be a pain
in the keister).

Outlook looks to whatever folders are defined for each activities group on the Properties dialog for that particular contacts folder. It uses both email addresses and Contacts links.

Sue, not sure I am understanding. These properties are the ones that are in
each individual listing, or you're saying there is a global setting
somewhere? My issue is two-fold. First, I don't know if Outlook is
searching my .pst (which is opened at the time). Second, I don't know how
it's going about figuring out if a mail is or is not associated wtih the
contacts. Can you break it down one more level for me?

Did you look at the Properties dialog for the contacts folder that you're interested in? If you did, you'd see that it has an Activities tab and on that tab, you set up the activities groups that show the search results in the Activities tab on each contact item in that folder.

As I said, the search looks both at email addresses and at explicit contact links make through the Contacts field (Links property) on each item.
