Absolute or fluid positioning

This is really simple so apologies. I don't build that many sites and when I
do they are fluid and table based.

I want to creat a new site with a fixed size with central positioning etc. I
just can't remember how to do it! It's in one of the books somewhere, but if
someone could remind me I'd be grateful!

Make tables a fixed width size in pixels rather than percent. Centre the
table in the page, etc.
