I want to use a single SATA disc with this board. I don't know anything about raids. Can I do this or does it have to be 2 drives in some raid array?

A single drive works fine. Make sure you have the SATA Jumper enabled.
When it's all hooked up you should see the drive displayed in the
SATAraid portion of the boot sequence but you need take no further
action at that point. Make sure you have the controller drivers on a
floppy if your doing a fresh install of WinXP/2K as you'll need to hit
F6 and insert the floppy when prompted, to merge the drivers with the OS
install. Change he boot device to SCSI after installing the OS. If just
using as an additional drive, hook it up and partition and format it!

No, you don't have to have two SATA HD's....I have a single 80Gb SATA HD and
it works fine.
