I am preparing a presentation, that will be done in front of 3 different
audiences. is there a way to have 3 different versions (not hiding slides
and not copying or creating different versions) so that I can show just the
slides needed for each audience?

Maybe create three custom shows from the slide deck. You can easily modify
Slide Show > Set Up Show to show whichever custom show is needed for any
audience

One small addition to John's solution. You can either do as John says
and set the set up of the file to play the correct show, or you can put
three buttons on your first slide that hyperlink to the appropriate
show. That way, you never have to remember to make the adjustment to the
Set Up Show in advance. You simply start the presentation and click on
the correct button. I know if it were I, I would forget to set up the
show properly in advance.
